Now that spring is in swing, it’s time to shift our recipe repertoire to foods that nourish the liver!

Examples of good springtime food that nourish the liver are green leafy vegetables, lemons, beets, garlic and celery. 

This springtime salad recipe is fresh and combines so many foods that will aid in supporting and cleansing your liver this spring. 

Mungbeans are excellent for clearing accumulated heat in the body. Lemon adds an element of sourness that is essential for the liver. In addition, pomegranates support healthy heart and blood function as well as helping to maintain a healthy blood pressure. 

1/2 Ib. mung beans (dried, soaked overnight)
6 Tbsp. olive oil
1/4 cup fresh lemon juice
1 Tbsp. pomegranate molases
1 clove garlic (minced to paste)
Flaky sea salt, freshly ground black paper
1 butternut squash (small, peeled, seeded and chopped into cubes)
1 cup fresh pomegranate seeds
Grated coconut to top
Fresh mint for serving
1 cup pistachios (gently toasted)
1/2 cup sesame seeds (gently toasted)
1/2 cup coriander seed (gently toasted)
1/4 cup cumin (gently toasted)
